Homemade Peachy Ginger Granola

Here is a wonderfully easy go-to Homemade Granola recipe prime for upgrades and additions such as any type of nuts, seeds, or dried fruit you are fancying this week! The super star and super secret of this amazing granola recipe... is that the oats are coated in 2 puréed ripe peaches with a fresh chunk of ginger root! 

Sweetening this granola naturally with fruit allows for beautiful flavor while adding less sugar or syrup. Making your own food is always the best but making your own granola really is the most ideal because store bought granola can sneak A TON of sugar and oils into their mix, making you wonder if “granola” is really even a healthy food anymore when you take a look at the nutriton facts!



INGREDIENTS

  1. 4 c. Thick rolled oats

  2. 3 tbs. flax seed meal

  3. 1/2 tsp pink Himalayan salt

  4. 1 1/2 tsp cinnamon

  5. 1/2 c raw pumpkin seeds

  6. 2 large ripe organic peaches 

  7. 1/2- 1 inch piece fresh ginger root

  8. 3 tbs coconut oil

  9. 3 tbs maple syrup plus 2 more tablespoons

  10. 1/2 c dried fruit (ex. Raisins and dried cherries)

    DIRECTIONS

    1. Preheat oven to 375 degrees
    2. In a large mixing bowl combine all of the dry ingredients (oats, ground flax, salt, cinnamon, and pumpkin seeds)
    3. In a blender or food processor blend 2 ripe, washed and pitted peaches with the chunk of peeled ginger (skin comes off super easy with the edge of a spoon), coconut oil, and 3 tablespoons of maple syrup
    4. Pour peachy purée over oats in bowl and mix to fully coat oats, most easily done using your hands
    5. Spread out on a baking sheet and slide into the oven for 30 minutes
    6. After 30 minutes, give a solid mix, breaking up any clumps, then add the dried fruit and roast for another 10-15 minutes until golden
    7. Remove from oven, drizzle 2 more tablespoons of maple syrup over tray and stir to fully coat for the perfect maple syrup kiss. As it cools your granola will gather the perfect crunch.

     

    Tips & Tricks

    • Enjoy for breakfast with cold nondairy milk and fresh seasonal fruit (more peaches!), as a crunchy snack on its own, bring it on a run, or sprinkle over coconut milk ice cream for a dessert or bedtime treat!
      Notes 

      Get some summer-seasonal peaches (at a stand around every corner in Colorado) and give this recipe a go! It’s promised to be easy, not the 30 bulk-section Intimidating-ingredient list you may have in mind for granola. A fun option is to use one nectarine and one peach for the fruity purée, but don’t forget the ginger! Get stone-fruit seasonal and get ready for crunchy, healthy, homemade goodness!
